Diana Lambeth's Squash Souffle

 

Squash Souffle'

Serves 6

Preheat oven to 350.

 

2 lb yellow squash - cut up

1 medium onion - chopped up

1 tsp salt

2 tsp sugar

3 Tbsp melted butter

3 Tbsp flour

2 eggs slightly beaten

1/2 lb sharp cheddar cheese

1 C milk

buttered bread crumbs or croutons

 

Combine Squash, onion, salt and sugar. Simmer in a small amount of water for 20 minutes. Drain well. Mash with potato masher. Add melted butter, flour, eggs, milk and cheese. Place in buttered 1 1/2 qt casserole. Bake for 30 minutes. Top with bread crumbs or croutons. Bake an additional 10 minutes.
